Creamy Green Soup


I'm not usually a big soup person, but this recipe is one of the best soups I've ever had! I tweaked a recipe I found from the Clean Cleanse. It contains all Essential Amino Acids, full of folate, calcium and iron!

Serves 4/5

  • 8 cups vegetable broth

  • 4 cups broccoli

  • 4 cups green beans

  • 2 cups yellow squash

  • 2 cups zucchini

  • 1 cup brown onion

  • 1 rib celery

  • 1 cup raw cashews

  • 5-10 cloves garlic

  • teaspoon oil

  • sea salt

Putting It All Together

  • soak cashews in boiling water, set aside (if you dont have a high powered blender, I would suggest soaking the nuts overnight)

  • sautee onion, garlic, oil and a dash of sea salt

  • when translucent add in chopped celery, zucchini, squash

  • add green beans, broccoli, drained cashews & broth, bring to boil, then let simmer for 20 minutes

  • puree in batches (vitamix/thermomix works best!)


If serving 5, each serving contains:

  • 27..7 net carbs ( 11g fiber)

  • 13.6 protein

  • 17.5 fat

  • 181 mg calcium

  • 133 mg magnesium

  • 298 mg phosphorus

  • 1,127.5 mg potassium

  • 5 mg iron

  • 136 ug folate

  • 2333.76 IU vit A

  • 141mg Vitamin C
