I'm not usually a big soup person, but this recipe is one of the best soups I've ever had! I tweaked a recipe I found from the Clean Cleanse. It contains all Essential Amino Acids, full of folate, calcium and iron!
Serves 4/5
8 cups vegetable broth
4 cups broccoli
4 cups green beans
2 cups yellow squash
2 cups zucchini
1 cup brown onion
1 rib celery
1 cup raw cashews
5-10 cloves garlic
teaspoon oil
sea salt
Putting It All Together
soak cashews in boiling water, set aside (if you dont have a high powered blender, I would suggest soaking the nuts overnight)
sautee onion, garlic, oil and a dash of sea salt
when translucent add in chopped celery, zucchini, squash
add green beans, broccoli, drained cashews & broth, bring to boil, then let simmer for 20 minutes
puree in batches (vitamix/thermomix works best!)
