Creamy Tomato Pasta Sauce

Want a creamy, cheesy sauce without all the fat and flatuence that comes with dairy/cream based sauces? This pasta sauce will keep you full and satisfied! Its quick and easy too :)

I've had a lot of free time on my hands lately, which isn't as fun as it sounds :( However, I was in the kitchen one day, and I wanted to make a special meal because my boyfriend was coming home and I hadn't seen him for a while. I was craving pasta and then remembered about this vodka sauce my friend Natalie had made once! I went off of what I could remember, then added my own twist!
Ingredients
Canned Crushed tomato (Big can)
you could probably do this with real tomatoes, i just didn't have any on hand!
3 cloves Garlic
2 Onions (1 medium purple/red, 1 small yellow!)
2 t coconut oil
1 cup soaked cashews (the better the blender, the less time you need to soak, the longer soaked- the creamier it gets!)
I soaked mine in water for about 4 hours ( I have a vitamix)
1/4 heaping cup nutritional yeast
basil for garnish and in sauce (if your canned doesn't have it added)
pasta of your choice!
Instructions:
Soak your cashews overnight, or at least 4 hours before making sauce. Dice your onions and mince your garlic, add to pot over medium heat, drizzle coconut oil and let sweat until translucent. Add in crushed tomato and opt. basil.
Pour cashew and water into colander, add cashew to blender/vitamix. Add contents in the pot into blender, BLEND! add in nutritional yeast for cheesier flavor!
If you have a vitamix, put it up to the highest setting to get the sauce warm, if not- feel free to add back to pot and over heat if its not warm enough for you!
Add over pasta of your choice (the picture uses farfalle wheat pasta)
I topped mine with roasted zucchini and carrots (coconut oil, salt and pepper, 350 degrees for 10-15 minutes) **Garnish with basil!

I've also eaten this sauce as a dip for my bread for a snack... its THAT good. I want it with everything.
