High in protein, low in fat/carb, my go to meat replacement! (not for those who are gluten sensitive/celiac!!!!)
1.5 cup vegetable broth
1.5 cup vital wheat gluten
1 cup nutritional yeast
any spices you want!!! I usually do a teaspoon of: smoked paprika, garlic, onion, and cumin! I also add a dash of mixed herbs.
1 t - 1 T sea salt
mix together dry ingredients
add in liquid (and a dash of olive oil if you want!)
stir
knead for 2 minutes, you'll see the gluten start to develop! This is pivotal for the seitan
let rest for 5-10 minutes then do a quick knead before shaping it into a ball (see above photo)
cut into 4 pieces and wrap in tin foil
steam for 15 minutes, flip the pieces around, steam for another 15 minutes
unwrap and let cool!
Makes 8 servings!
